Fun with Chemistry

I feel like Tom Hanks in Castaway when he finially makes fire!

Last night I had this brilliant idea that I would attempt to make the hard cinnamony candy that one of my cousins used to make for every Christmas. Well my first attempt sucked.

I didn't have a candy thermometer and didn't think it was all that necessary. They have directions for people who don't have them. Simply drop alittle into cold water and when it "beads" its ready. Well mine didn't bead. I didn't really know what I was looking for so I thought it was ready. But it never hardened, so I put it in the freezer. And it did harden, until I let it stand in the room temp then it started to soften up.

So today I went to Hobby Lobby and got myself a handy candy thermometer. My second attepmt was glorious! When it hit 300 degrees I took it way from the heat and did the cold water trick. IT BEADED... I get it now! Now I know what to look for and I know what happened last night. I didn't get it nearly hot enough. I could tell just be having the thermometer in it and what the product was looking like at each stage. My attempt last night didn't look like it did this time so I know that I didn't get it hot enough.

I never took Chemistry in high school but in JHS I think I remember talking about chemistry a bit in a generic science class. But today it was like magic, all of a sudden I understood something chemistry wise....

P.s. I did have chemistry in beauty school, but that was different...

Sounds like making candy is a bit of an adventure.

I wish I was that ambishous, but alas, I'm just LAZY!!

Now I have made Pecan Brittle... I'm just a domestic DIVA!!
